Maple Chicken and sweet potatoes

6 Chicken breasts - spray with Olive oil spray, and sprinkle with Thyme and salt and pepper.


Cut up 3 or 4 large peeled sweet potatoes into cubes. Cut up 1 large onion and mix with potatoes. Spray with olive oil spray and sprinkle with Thyme and salt and pepper.. Spray bottom of pan with olive oil and put mixture in pan.


Place chicken breasts on top of potato mixture. Drizzle 1/2 cup sugar-free maple syprup over chicken and potatoes. Bake uncovered in 350 deg. oven for 1 hour (or 1hr 15 min. depending on oven). Chicken should be slightly browned
